Cuban Rice -Gluten Free & Vegan

I’ve never had Cuban rice before, but yum, it looks delicious!
Yellow rice is my fav. This looks like a great alternative!

INGREDIENTS:
  • 2 cups rice
  • 4 cups water
  • 1 tablespoon turmeric
  • 2 carrots chopped
  • 1/2 red pepper chopped
  • 1 veggie bouillon cube
  • 1 teaspoon salt
  • 2 tablespoons avocado oil (or olive oil)

INSTRUCTIONS:
  1. Peel and chop carrots.
  2. Chop red pepper and dump all veggies into a large pot.
  3. Add rice, water, bouillon, oil, salt and turmeric.
